Dynamics of residual nitrates and nitrites in milk during the year

Summary
Levels of nitrates and nitrites were observed in pool samples of milk from selected suppliers of the Kosice dairy, and in dairy treated milk during individual months of the year. The average value of nitrates in examined (432) pool samples of milk ranged from 1.84 to 4.58 mg of NaNO3.l-1, and in dairy-treated milk (72 samples) from 2.33 to 6.23 mg NaNO3.l-1 (Fig.1 and 2).
In both cases maximal values were observed in April, and minimal values in January. With the exception of one pool sample, all the examined milk samples complied with the Directives concerning Hygienic Requirements on Extraneous Matter in Comestibles, valid in the our country. The average value of residual nitrites in the examined samples of milk taken during the investigative period, amounted to 0.07 mg NaN02.l-1.
