THE OCCURRENCE OF MICROSCOPIC FILAMENTOUS FUNGI IN HEAT-UNTREATED MEAT PRODUCTS

Summary

At several monthly intervals in the course of a year, seventy samples were collected from heat-untreated meat products. The occurrence of microscopic filamentous fungi was observed in these samples.
The highest occurrence of microscopic filamentous fungi was recorded in raw meat in the winter months, in the minced meat in the summer months, in flavourings in the summer months, and in final products in the summer months.
