THE INSPECTION OF GAME MEAT IN AUSTRIA

Summary

In 1994, a Game Meat Regulation was issued (based on EC Directive 92/45/EEC) to regulate the game-meat trade from the moment before shooting to the time of sale to consumers, retailers, and wholesalers and to define the hygiene conditions for storage, cutting and deboning. The hunter was addressed as the first link in the chain of the production of game meat as human food and therefore, the ante mortem and parts of the post mortem inspection (during evisceration) were assigned to the hunter. Non-veterinarian game-inspection personnel were established. The type of meat inspection was designed not only according to abnormities detected during the meat inspection performed by the hunter, but also for the type of marketing (wholesale with the option of trade within the EU, local retailers within Austria, direct sale to the consumer). In the case of serious abnormities and in the wholesale field, the official veterinarian has to make the final inspection and assessment of game meat.
