Summary

Because the basic component of feed rations of broiler chickens and laying hens consists of cereals, and increased accumulated levels of nitrates, our investigations concerned the degree of qualitative impairment of our everyday food-stuffs - poultry meat and eggs - caused by the levels of these hazardous substances. The results of our investigation of nitrate and nitrite residues in the meat and organs of broilers and in the meat, organs, and eggs of layers indicate that feeding mixtures presently used do not lower the biological quality of eggs, nor the quality of poultry-meat.
